We tried this out on Alder as a traditional flavor profile utilizing Tilapia, which is not a commonly grilled fish. This could be a great way to bump up the flavor of a very affordable and mild fish.

Ingredients:

  • 1 Alder Plank
  • 3 Tilapia Filets
  • 1 Ts Kosher Salt
  • 1 Ts Chili Powder
  • 2 Green Onions, sliced
  • 1/2 Yellow bell, sliced
  • 1/4cup Cilantro Leaves
  • 3 Radishes Sliced
  • 1 Lime

Chef's tip

For a bolder flavor try using a Cedar Plank.

Directions

  1. Soak the plank in hot water for at least 15 minutes and preheat grill to 400°F.
  2. Pat Tilapia dry and set on the soaked plank.
  3. Combine the salt and chili powder and divide evenly between fillets by sprinkling over the fish.
  4. Set the plank on the grill and close the lid. While the fish cooks combine the green onion, cilantro, bell pepper and cilantro, set aside.
  5. Halve the lime and set cut side down on the grill for 1 minute to create grill marks.
  6. Remove the plank from the grill after 10 minutes or until desired doneness is reached, garnish with the slaw.
  7. Squeeze lime juice over to serve and enjoy.
