When spring is just around the corner, I find any excuse to get outside and use my grill. The more parts of the meal that can be grilled, the better. But oftentimes, food like appetizers, sides and dessert are hard to grill. For these strawberry hand pies, we decided to use a Cherry plank. This not only keep the pies from burning on the grill, it also infuses a slight sweet smoke flavor.

Total Time: 30 minutes
Servings: 5 hand pies

Ingredients:

Chef's Tip

“Toast” the plank prior to
adding the hand pies
by putting the plank on
the preheated grill for
2-3 minutes on each side.

Directions:

  1. Preheat grill to 400°F.
  2. Cut strawberries into small pieces. Combine with sugar and cornstarch.
  3. Roll out pie crust dough. Using a pizza cutter, cut out 10 rectangles (approximately 3″ wide and 5″ tall).
  4. Add strawberry mixture onto dough rectangle. Place another rectangle on top and close by pressing firmly on the sides, using a fork.
  5. Cut 3 slots into top of hand pie. Whisk egg and brush egg wash onto hand pies.
  6. Place pies on plank and add to preheated grill. Cook with lid closed for approximately 15-20 minutes, or until golden brown.
  7. When done, remove from grill.
  8. Mix powdered sugar and water to create frosting. Drizzle frosting over cooked hand pies.
  9. Serve with ice cream and fresh strawberries. Enjoy!
