For these fajitas, we decided to place the rockfish on a bed of vegetables right on the Maple plank. That way, the vegetables also absorb the sweet, smokey flavor from the plank.

Ingredients:

  • 2 – 5 x 11” Maple Planks
  • Juice of ½ of a Lime
  • 1 Tbs. Adobo
  • 2 Tbs. Olive oil
  • 1 tsp. Salt
  • 4 Rockfish Filets
  • ½ Red Bell Pepper
  • ½ Green Bell Pepper
  • ½ Yellow Squash
  • ½ Zucchini
  • 1 Red Onion
  • Lime Wedges
  • Cilantro
  • Flour Tortillas

Chef's Tip

Plank the vegetables
by themselves first,
as they will take
longer to cook than
the rockfish filets.

Directions:

  1. Soak Maple Planks in hot water for at least 15 minutes.
  2. Preheat grill to 400°F.
  3. Mix Lime Juice, Adobo, Olive Oil and Salt in a small bowl.
  4. Slice all the vegetables and toss with half of the Adobo sauce.
  5. Place the loaded plank on the pre-heated grill and cook with the lid closed until the vegetables are partially cooked, about 10 minutes.
  6. Place the Rockfish Filets on top of the planked vegetables. Brush with remaining Adobo sauce.
  7. Close grill lid and cook an additional 8-10 minutes, until fully cooked.
  8. Quickly grill the tortillas.
  9. Have a spray bottle of water handy for flare-ups.
  10. Remove from grill and serve with tortillas, lime wedges and cilantro.
  11. Enjoy!
