Pork can be pretty tricky to cook. It can dry out very quickly when cooked incorrectly. That’s why we decided to do this pork loin recipe on a Maple grilling plank. Not only does it infuse sweet, smoky flavor, it keeps the meat moist and juicy and protects it from direct flame.

Chef's Tip

If you have a little
bit more time, rub the
pork loin with dry rub
and place in the fridge for
1-2 hours before cooking.

Directions:

  1. Soak Maple plank in hot water for at least 15 minutes.
  2. Preheat grill to 400°F.
  3. Combine brown sugar, mustard powder, paprika, salt and pepper. Rub on pork loin.
  4. Place pork loin on plank and add to preheated grill. Close the lid.
  5. Cook for 45-55 minutes, or until done.
  6. Keep a spray bottle of water handy for flare-ups.
  7. Remove from grill. Cover with aluminum foil and let rest for 10 minutes.
  8. Slice and enjoy!
