Seasonal root vegetables are must on any menu at this time of year, especially at the thanksgiving table. We wrapped these vegetables in Cedar and topped them with a pumpkin seed sage pesto to really bring this dish to life.

Ingredients:

6 Cedar wraps

5 Parsnips, halved

3 Rutabegas, sliced

3 Turnips, sliced

5 Carrots, halved

1 Tbsp Kosher Salt

For the Pesto
-
1/4 cup Pumpkin seeds
-
1 Clove garlic
-
2 Tbsp fresh Sage
-
1/2 cup olive oil
Chef's Tip
Serve this dish in the cedar wraps for some dramatic and rustic presentation.
Directions:

Soak the wraps in water for several minutes and pre heat grill to 375°F.

Toss the vegetables in olive oil, and salt, divide into 10 portions.. Place the portions on the Cedar Wraps and roll up to form a log shape, secure with twine.

Place on the grill and close the lid, cook for 30 minutes or until the vegetables are tender.

For the pesto, add all ingredients except the oil to a food processor and with the machine running, slowly add the oil in a steady stream.

To serve, remove the wraps from the grill, cut the twine, open the package and drizzle with pesto.
