Holiday Cedar-Planked Salmon with Fresh Aioli and Pomegranate-Grapefruit Garnish

- 7x15 Western Red Cedar Plank https://www.wildwoodgrilling.com/product/cedar-grilling-planks-large/
- 1.5 to 2 lbs Salmon Filet, bones removed
- 1/4 Cup Honey
- 1 tbsp Kosher salt
Garnish
- 1 Red Grapefruit
- 1 Orange
- 1 Lime
- 1/3 Cup Pomegranate Seeds
- 1/4 Cup Pumpkin Seeds
Aioli
- 3 Egg yolk
- 1/2 Cup Mild olive oil
- 1/2 Cup Flat leaf parsley
- 1/2 Lime (juiced)
- Pinch of salt
Instructions
- Preheat oven to 450°F
- Soak Cedar plank submerged in hot water for at least 15 minutes
- Brush Salmon all over with the honey, sprinkle on the salt, and place in the oven directly on the top rack.
- Place a sheet pan underneath to catch any drips. The Salmon will take around 25 minutes to cook, brush on honey 2 more times during cooking.
- Garnish and serve immediately!!
