Squash, commonly referred to as the flavor of fall just got a new sidekick, Cedar Planks. When combined you get a delightful mix of flavor and color. Oh and did we mention it’s super easy to do?

Ingredients:

  • 2 Cedar Grilling Planks
  • 1 Medium Butternut Squash
  • ¼ Cup Maple Syrup
  • 2 Tbsp Olive Oil
  • 1 Tbsp Dijon Mustard
  • 1 tsp fresh Thyme leaves
  • 1 tsp Salt
  • 2 oz Goat Cheese, crumbles

Chef's Tip

For a sweeter twist on this recipe, brush some brown sugar and melted butter on the squash and let it caramelize!

Directions:

  1. Soak the grilling planks in hot water for at least 15 minutes.
  2. Preheat grill or oven to 400°F.
  3. Peel the squash and cut in half lengthwise, scoop out seeds with a large spoon.
  4. Place both squash halves cut side down on the planks and bake or grill for about 20-25 minutes until softened. Remove from the heat and let cool until you can safely handle with your bare hands.
  5. Meanwhile, in a small bowl combine maple syrup, olive oil, mustard, thyme, and salt. Mix well until completely combined.
  6. Working with one squash half at a time, place a wooden spoon or other wooden utensil on either side of the squash, and use a sharp knife to carefully cut into the squash, leaving about a 1/2″ at the base.
  7. Using a pastry brush, glaze the squash halves with some of the maple mixture, place back on the planks and cook 20 more minutes, or until fully cooked. Occasionally baste with more syrup.
  8. Remove from the grill or the oven, sprinkle with the thyme and goat cheese.
  9. Enjoy!
