Holiday Cedar-Planked Salmon with Fresh Aioli and Pomegranate-Grapefruit Garnish

  • 7x15 Western Red Cedar Plank https://www.wildwoodgrilling.com/product/cedar-grilling-planks-large/
  • 1.5 to 2 lbs Salmon Filet, bones removed
  • 1/4 Cup Honey
  • 1 tbsp Kosher salt

Garnish

  • 1 Red Grapefruit
  • 1 Orange
  • 1 Lime
  • 1/3 Cup Pomegranate Seeds
  • 1/4 Cup Pumpkin Seeds

Aioli

  • 3 Egg yolk
  • 1/2 Cup Mild olive oil
  • 1/2 Cup Flat leaf parsley
  • 1/2 Lime (juiced)
  • Pinch of salt

Instructions
 

  • Preheat oven to 450°F
  • Soak Cedar plank submerged in hot water for at least 15 minutes
  • Brush Salmon all over with the honey, sprinkle on the salt, and place in the oven directly on the top rack.
  • Place a sheet pan underneath to catch any drips. The Salmon will take around 25 minutes to cook, brush on honey 2 more times during cooking.
  • Garnish and serve immediately!!
