The subtle sweetness from a double dose of maple is like a perfect best friend to roasted carrots. Herby yogurt sauce is quickly becoming our new favorite add on to anything.

Ingredients:
Carrots:
- 2 Maple Planks
- One bunch of Carrots, halved lengthwise
- 1 Tbsp. Olive Oil
- 1 Tbsp. Maple Syrup
- 2 sprigs fresh Oregano
- Salt and Pepper
Herbed Yogurt Sauce:
- 1 cup Greek Yogurt
- 1 Tbsp. fresh Oregano
- Salt and Pepper
Chef's Tip
Use any fresh herbs you have on hand for the herby yogurt sauce.
Directions:
- Preheat oven to 475°F, and soak Maple planks in hot water for 15 minutes.
- In a small bowl, combine olive oil and maple syrup.
- Place soaked planks on a baking sheet to avoid a mess, and divide carrots between the planks.
- Drizzle maple syrup mixture over the carrots and season with salt and pepper.
- Transfer the baking sheet to the oven and bake for 30-40 minutes, or until done to your liking.
- While the carrots are roasting, combine yogurt with oregano and add salt and pepper to taste.
- Divide the sauce evenly among 2 plates and top with the carrots.
*Keep a spray bottle of water handy in case of flare-ups.
