Total Time: 30 minutes
Servings: Yields 1lb.

Ingredients:

  • 1/2 cup Maple Chips

  • 1 lb unsalted Butter

Directions:

  1. Soak the chips for up to an hour and set up a cold smoker, smoking gun or a hot smoker can also be used.

  2. Place the butter in a shallow dish and ignite the chips, reduce to a smolder and smoke the butter for 30 minutes.

  3. Remove and wrap the butter tightly in plastic and refrigerate.

    *If using a hot smoker, follow the same directions on the lowest heat setting. The butter will melt so after it is smoked pour into a bowl, set over ice and whisk until firm.
