Pork can be pretty tricky to cook. It can dry out very quickly when cooked incorrectly. That’s why we decided to do this pork loin recipe on a Maple grilling plank. Not only does it infuse sweet, smoky flavor, it keeps the meat moist and juicy and protects it from direct flame.

Ingredients:
- 5 x 11” Maple Grilling Plank
- 2 lb. Pork Loin, boneless
- 2 Tbsp. Brown Sugar
- 1 tsp. Mustard Powder
- 1 tsp. Paprika
- Salt and pepper to taste
Chef's Tip
If you have a little
bit more time, rub the
pork loin with dry rub
and place in the fridge for
1-2 hours before cooking.
Directions:
- Soak Maple plank in hot water for at least 15 minutes.
- Preheat grill to 400°F.
- Combine brown sugar, mustard powder, paprika, salt and pepper. Rub on pork loin.
- Place pork loin on plank and add to preheated grill. Close the lid.
- Cook for 45-55 minutes, or until done.
- Keep a spray bottle of water handy for flare-ups.
- Remove from grill. Cover with aluminum foil and let rest for 10 minutes.
- Slice and enjoy!
