With a bountiful harvest of tomatoes, you have to get creative. There’s no better way to use up those beautiful heirloom tomatoes than grilling this Cedar planked caprese napoleon. Grilling tomatoes can be tricky because the juicy slices oftentimes fall through the grates or can dry out. Using a Cedar plank adds a delicious smoky flavor and a beautiful presentation.

Ingredients:
- 5×11″ Wildwood Grilling Cedar Plank
- 2 Heirloom Tomatoes
- Fresh Mozzarella Cheese
- Fresh Basil Leaves
- 4 Tbsp. Olive Oil
- 4 Tbsp. Balsamic Vinegar
- 1 Tbsp. Honey
- Salt & Pepper

Serve this dish directly
on the plank for a
beautiful presentation as
an appetizer or side dish.
Directions:
- Soak the Cedar plank in hot water for at least 15 minutes.
- Preheat oven or grill to 350°F.
- Slice heirloom tomatoes and mozzarella cheese, approximately 1/8″ thick.
- Stack ingredients directly on soaked plank, in this order: tomato, basil, mozzarella, tomato, basil, mozzarella, tomato.
- Mix olive oil, balsamic vinegar and honey together. Season with salt and pepper to taste.
- Baste sauce over caprese napoleon.
- Place plank on grill and close lid.
- After 5 minutes, baste caprese napoleon with sauce again. Close lid again.
- When done, remove from grill and serve immediately.
