Rockfish on a cedar plank is quick and easy for any night that you’re not feeling up to a big project.

Ingredients:
- 2-3 Cedar Grilling Planks
- 2 Red Snapper Fillets or 1 Whole Red Snapper, cleaned
- 1 Tbsp Olive Oil
- Salt
Tomatoes:
- 2 cups of Mixed Color Cherry Tomatoes
- 2 Shallots, sliced in half
- 3 Green Onions
- 1 Tbsp Olive Oil
- 4 large leaves of Fresh Basil, thinly sliced
- Salt to taste
Chef's Tip
Mix the tomatoes the day before serving for added flavor.
Directions:
- Soak the grilling planks in water for 15 minutes.
- Preheat the oven broiler or start the grill.
- In a medium bowl, add the tomatoes, shallots, and onions, sprinkle with oil and salt, mix to coat and place on one of the planks. Grill or broil for about 5-7 minutes, until the tomatoes start to burst. Remove from the oven/grill, slice the onions and the shallots, mix all the veggies in a bowl, add basil. Set aside.
- Rub the snapper fillets with oil, sprinkle with salt, place on a plank and grill or broil for about 10 minutes.
- Remove the snapper from the oven/grill and top with the cherry tomato-basil mix.
*Keep a spray bottle of water handy in case of flare-ups.
