Tacos are a standard meal at most households in America. But re-inventing this familiar dish can be a challenge. That’s what we tried to do with this recipe. The Cedar planked catfish adds a smoky flavor to the tacos. Add our toppings listed below, or substitute with your own favorite taco toppings.

Ingredients:
- 2 Catfish Filets
- 2 Tbs. Butter, melted
- 1 clove Garlic, minced
- 1 tsp. Chili Powder
- 8 Corn Tortillas
- 2 cups Shredded Green Cabbage
- ¼ cup Cilantro Leaves
- Juice of half a lime
- 1 cup Tomatillo Salsa

Directions:
- Soak Cedar Plank in hot water for at least 15 minutes.
- Preheat grill to 400°F.
- Place the Catfish Filets on the plank. If the filets hang over the edge, fold the thin ends under to double up the filet.
- Mix melted butter, garlic and chili powder in a small bowl then brush on the catfish filets.
- Place the loaded plank on the pre-heated grill and cook with the lid closed until fully cooked – 10-12 minutes. Have a spray bottle of water handy for flare-ups.
- Remove plank from the grill and cover with foil to keep the catfish warm.
- To make the slaw, mix the shredded cabbage, cilantro and lime juice. Set aside.
- Briefly grill the corn tortillas.
- Serve the corn tortillas with the catfish, cabbage slaw and tomatillo salsa.
