In my opinion, all grilled cheese sandwiches should be made on an actual grill. There’s something about that smoky flavor being infused into the cheese and bread that makes this ordinary recipe a special treat. For this recipe, we decided to use NW Blend smoking chips. They are a mix of Maple, Cherry and Alder for a balanced, subtle smoke flavor.

Ingredients:

  • 2-3 handfuls of NW Blend Smoking Chips
  • 4 slices of Sourdough Bread
  • Cheddar Cheese, sliced
  • Pepper Jack Cheese, sliced
  • Butter

Chef's Tip

Experiment with different
cheese combinations!

Directions:

  1. Soak the smoking chips in warm water for up to 20 minutes.
  2. Preheat grill to 350°F, leaving one side of the grill as indirect heat.
  3. Add cheese to the bread and spread butter on the outside of the bread slices.
  4. Add sandwich to the indirectly heated side of the grill.
  5. Cook for 5 minutes until cheese is slightly melted (but not runny).
  6. Move sandwiches to directly heated side of grill and cook for 1-2 minutes on each side, or until crispy.
  7. Serve with tomato soup.
  8. Enjoy!
