In my opinion, all grilled cheese sandwiches should be made on an actual grill. There’s something about that smoky flavor being infused into the cheese and bread that makes this ordinary recipe a special treat. For this recipe, we decided to use NW Blend smoking chips. They are a mix of Maple, Cherry and Alder for a balanced, subtle smoke flavor.

Ingredients:
- 2-3 handfuls of NW Blend Smoking Chips
- 4 slices of Sourdough Bread
- Cheddar Cheese, sliced
- Pepper Jack Cheese, sliced
- Butter
Chef's Tip
Experiment with different
cheese combinations!
Directions:
- Soak the smoking chips in warm water for up to 20 minutes.
- Preheat grill to 350°F, leaving one side of the grill as indirect heat.
- Add cheese to the bread and spread butter on the outside of the bread slices.
- Add sandwich to the indirectly heated side of the grill.
- Cook for 5 minutes until cheese is slightly melted (but not runny).
- Move sandwiches to directly heated side of grill and cook for 1-2 minutes on each side, or until crispy.
- Serve with tomato soup.
- Enjoy!
