This is the ultimate party platter, loaded with goodies. This recipe focuses on the chicken part of the platter. You should have fun with the rest of the components – making your own hummus and tzatziki, or not!

Total Time: 1-2 hours
Servings: 4

For the Chicken

  • Cedar Grilling Planks
  • 2 large Chicken Breasts
  • 1 Tbsp Olive Oil
  • 2 tsp dried Oregano
  • 1 Lemon, zest & juice
  • 3 cloves Garlic, minced
  • Salt & Pepper to taste

For the Platter

  • Tzatziki
  • Hummus
  • Baba Ghanoush
  • Grape Tomatoes, halved
  • Red Onion, half moons
  • Cucumber, sliced
  • Kalamata Olives
  • Lemon wedges
  • fresh Mint
  • Olive Oil
  • Pita or Naan, cut into wedges
  • Feta, crumbled

  1. Prep the dips ahead of time, or use store bought. Keep them in the fridge until you’re ready to assemble the platter.
  2. Soak the grilling plank in warm water for ~15 minutes, preheat a charcoal or gas grill to high heat, 400˚F.
  3. Whisk together olive oil, oregano, lemon, garlic, salt, and pepper in a bowl. This is your chicken marinade. You can marinade the chicken in a bowl or ziplock bag for at least 30 minutes, and up to overnight.
  4. Place chicken on cedar planks and grill with the lid closed until inner temps reach 165˚F, about 20 minutes.
  5. While the chicken is resting, assemble your platter artfully. Slice the chicken and add to the platter.
  6. Garnish as desired and give the whole thing a nice drizzle of olive oil.
  7. Enjoy!

*Keep a spray bottle of water handy in case of flare-ups.
