This is the ultimate party platter, loaded with goodies. This recipe focuses on the chicken part of the platter. You should have fun with the rest of the components – making your own hummus and tzatziki, or not!

Ingredients:
For the Chicken
- Cedar Grilling Planks
- 2 large Chicken Breasts
- 1 Tbsp Olive Oil
- 2 tsp dried Oregano
- 1 Lemon, zest & juice
- 3 cloves Garlic, minced
- Salt & Pepper to taste
For the Platter
- Tzatziki
- Hummus
- Baba Ghanoush
- Grape Tomatoes, halved
- Red Onion, half moons
- Cucumber, sliced
- Kalamata Olives
- Lemon wedges
- fresh Mint
- Olive Oil
- Pita or Naan, cut into wedges
- Feta, crumbled
Directions:
- Prep the dips ahead of time, or use store bought. Keep them in the fridge until you’re ready to assemble the platter.
- Soak the grilling plank in warm water for ~15 minutes, preheat a charcoal or gas grill to high heat, 400˚F.
- Whisk together olive oil, oregano, lemon, garlic, salt, and pepper in a bowl. This is your chicken marinade. You can marinade the chicken in a bowl or ziplock bag for at least 30 minutes, and up to overnight.
- Place chicken on cedar planks and grill with the lid closed until inner temps reach 165˚F, about 20 minutes.
- While the chicken is resting, assemble your platter artfully. Slice the chicken and add to the platter.
- Garnish as desired and give the whole thing a nice drizzle of olive oil.
