One of our favorite ways to find new recipes to try is by asking friends, family and coworkers for their tried-and-true recipes. And this recipe is an exciting one to get our hands on! For months, our awesome team member Jill from accounting has been teasing us with samples of her homemade smoked salsa. So we couldn’t be happier that she agreed to finally share her delicious recipe with us! Without further ado…here is Jill’s homemade salsa smoked on Cedar.

Ingredients:
- 1 Cedar Grilling Plank
- 4-5 Roma Tomatoes, quartered
- 1 medium Onion, quartered*
- 1 Jalapeno, halved (keep the seeds in if you want more spice)
- 1 small Lime, juiced
- 1 cup Cilantro (stems and leaves), chopped
- 1 can diced Tomatoes and Chilies
- 1 1/2 tsp. Cumin (or to taste)
- Salt and Pepper
- 1 pinch Sugar
- Drizzle of Olive Oil
Jill's Tips
*For fresher flavor, I reserve 1/4 of the onion,
chop it and add it to the food processor raw,
but you may choose to grill the whole onion
if that’s your thing.
*Also, letting the salsa chill for a bit in the
fridge for a few hours lets the flavors marry
and really even out, but if you simply can’t
wait, just go ahead eat it as soon as you make it!
Directions
- Soak Cedar Plank in warm water for 15 minutes.
- Preheat grill to 350°F.
- Place roma tomatoes, 3/4 of the onion and the jalapeno halves in a bowl.
- Lightly toss with a drizzle of olive oil and juice from 1/2 of the lime. Season with salt, pepper and 1/2 tsp. cumin and gently toss to coat all veggies.
- Place on a heated cedar plank and grill for 10-15 minutes or until desired doneness.
- Let veggies cool slightly, then slip the tomato skins off and discard. Place grilled veggies and all remaining ingredients in a food processor and pulse to desired consistency.
- Chill and enjoy!
