For these fajitas, we decided to place the rockfish on a bed of vegetables right on the Maple plank. That way, the vegetables also absorb the sweet, smokey flavor from the plank.

Ingredients:
- 2 – 5 x 11” Maple Planks
- Juice of ½ of a Lime
- 1 Tbs. Adobo
- 2 Tbs. Olive oil
- 1 tsp. Salt
- 4 Rockfish Filets
- ½ Red Bell Pepper
- ½ Green Bell Pepper
- ½ Yellow Squash
- ½ Zucchini
- 1 Red Onion
- Lime Wedges
- Cilantro
- Flour Tortillas
Chef's Tip
Plank the vegetables
by themselves first,
as they will take
longer to cook than
the rockfish filets.
Directions:
- Soak Maple Planks in hot water for at least 15 minutes.
- Preheat grill to 400°F.
- Mix Lime Juice, Adobo, Olive Oil and Salt in a small bowl.
- Slice all the vegetables and toss with half of the Adobo sauce.
- Place the loaded plank on the pre-heated grill and cook with the lid closed until the vegetables are partially cooked, about 10 minutes.
- Place the Rockfish Filets on top of the planked vegetables. Brush with remaining Adobo sauce.
- Close grill lid and cook an additional 8-10 minutes, until fully cooked.
- Quickly grill the tortillas.
- Have a spray bottle of water handy for flare-ups.
- Remove from grill and serve with tortillas, lime wedges and cilantro.
- Enjoy!
