With spring well on its way, it was well overdue for us to make a delicious spring veggie recipe. We decided to go with an Alder wrap for a slightly more subtle smoky flavor. The wrap also protects the vegetables from direct flame, as well as keeping all those delicious juices inside. Enjoy!

Ingredients:
- 8 Alder Wraps
- Mixed Spring Vegetables
- 1 bunch Fresh Herbs (chives, thyme, basil)
- 4 Tbs. Olive Oil
- Salt & Pepper
- Optional: Parmesan Cheese
Chef's Tip
Some of our favorite spring veggies:
Asparagus, spring onions,
baby carrots, fennel and snap peas.
Directions:
- Soak the Alder Wraps in water for 5 minutes.
- Preheat oven or grill to 400°F.
- Prepare vegetables by slicing into long thin pieces.
- Fill Alder Wraps with spring vegetable mixture, parallel to the grain of the wood.
- Top with fresh herbs, olive oil and season with salt and pepper (and Parmesan cheese, if desired).
- Fold edges of the wrap toward each other and secure with twine.
- Place wraps on the grill or in the oven; Cook for 10 minutes.
- Have a spray bottle of water handy for flare-ups.
- Serve immediately and enjoy!
